Babalú Bianco from Sicily, Italy, is a vibrant still white wine (bianco) that is delightfully dry. Crafted from a Sicilian Field Blend, the grapes are harvested in the cool morning and gently pressed, then fermented at 14°C in stainless steel tanks. Left on lees with occasional battonage, the wine does not undergo malolactic fermentation, ensuring it remains bright, fresh, and zippy. It offers punchy tropical aromas of peach and pineapple, leading to a palate where these fruit flavours are joined by ripe pear, all balanced by a refreshing acidity. This vegan and vegetarian-friendly wine is incredibly versatile, pairing beautifully with antipasti, lean fish dishes, and risotto.

Vinification
Harvested in the cool of the morning for maximum preservation of fresh fruit flavours. Gentle pressing in a pneumatic press followed by overnight cold maceration to extract all the aromatics from the grapes. Fermented at 14C in stainless steel, temperature-controlled tanks. Left on the lees with occasional battonage enhance the texture and complexity of the wine. The wine does not undergo malolactic fermentation to ensure it is bright, fresh and zippy.
