Mabis Valpolicella Classico Superiore, Ripasso Valpolicella DOC, Italy, is a Still Red (Rouge) Off-Dry wine crafted from Corvina Veronese, Rondinella, and Molinara grapes. Benefiting from the Ripasso method using sun-dried grape skins and aged for 12 months in oak barrels, this vegan and vegetarian-friendly wine bursts with cherry aromas, offering great depth of silky smooth fruit with a hint of sweetness and a long, rich velvety finish. It pairs beautifully with mushroom risottos, spiced sausages, or mature hard cheeses.

Vinification
Hand picked up and placed in wooden cases, either at dawn or at late in the evening, to avoid the intense heat of the day. Ripasso wines benefit from extra structure and fruit delivered by using the skins of the sun dried grapes. Aged in oak barrels for 12 months, with a light refinement in barriques.
