Château Ponzac Maintenant ou Jamais from Cahors, France, is a vibrant ruby-red still dry Malbec. Crafted with grapes manually harvested and fermented at controlled temperatures, then aged in stainless steel for 8-10 months to preserve its pure fruit character with no oak influence. The nose offers expressive aromas of ripe red fruits like strawberries and cherries, alongside subtle floral notes. On the palate, it is smooth and round with lively acidity, revealing flavours of blackcurrant and violet, leading to a clean, crisp finish. This wine is perfect with roasted pork tenderloin or a lentil and walnut salad.

Vinification

After manual harvesting, the grapes undergo a fermentation process lasting 12 to 15 days at a controlled temperature of 22°C to preserve the freshness and crispness of the fruit. The wine is then aged in stainless steel tanks for 8 to 10 months, allowing the pure fruit character to shine through. The winemaking process is overseen by Matthieu and Virginie Molinié, with assistance from Pascal Verhaeghe of Château du Cèdre, ensuring precision and quality in every step. No oak ageing.
