Vinification
Hand picking of grapes, soft pressing and light soaking to get the soft pink colour. Fermentation at a controlled temperature below 20 ° C using selected yeasts. Storage in steel tanks at a controlled temperature always below 20° trying to protect the wine with nitrogen to avoid the oxidative effect of the air. Cold stabilization and bottling through isobaric filler.
