Cielo e Terra, Casa Defra Sauvignon Blanc Veneto IGT from Veneto, Italy, is a delicate, crisp white (blanc) still wine. This dry Sauvignon Blanc undergoes careful cold maceration and fermentation in stainless steel tanks, a process that beautifully preserves its vibrant, aromatic character. It offers a pleasant bouquet of passion fruit, white peach, and bright citrus notes, leading to a fresh, lively, and fruity taste with a good aromatic intensity. This versatile wine is excellent with raw fish appetizers, light first courses based on fish, various vegetables, and fresh cheeses. It is also proudly suitable for both vegans and vegetarians.

Vinification
The grapes are harvested manually and the maceration takes place cold for a few hours. Use of selected yeasts, fermentation at a temperature below 20° C, resting on the lees under protection of nitrogen. Maturation is done in stainless steel tanks at controlled temperatures below 20° C to avoid malolactic fermentation. Sterile bottling by isobaric filler.
