Cramele Recas Umbrele Merlot from Vilie Timisului, Romania, is a vibrant Red still dry wine crafted from 100% Merlot grapes. This vegan and vegetarian-friendly wine undergoes fermentation in stainless steel tanks with natural malolactic fermentation and no oak ageing, ensuring a pure expression of fruit. It boasts rich aromas of dark fruits, plum, blackberry, spice, and a hint of vanilla. Medium-bodied, it delivers jammy blackcurrant and a touch of dark chocolate on the palate, complemented by warm tannins and a fine finish. This versatile wine pairs wonderfully with roast pork or veal.

Vinification
Crushing and full de stemming on all parcels, with fermentation in stainless steel 40 to 50 tonne tanks with temperature controlled yeast inoculation at 25-32 deg C for about 5-7 days on the skins with regular automated pumpovers. Pressed with some sugar still present. Fermentation finishes off skins, centrifugation off gross lees as soon as dry followed by natural malolactic fermentation
Flavour profile
This Merlot presents a dark violet hue, offering rich aromas of dark fruits, plum, blackberry, and a hint of vanilla with subtle spice. On the palate, it is medium-bodied and brimming with jammy blackcurrant and a touch of dark chocolate, finishing with warm tannins.
Serving recommendation
Serve at 16-18°C. Decant for 30 minutes to enhance its rich fruit flavours.
