Domaine Chatzivariti Mosaic White Slopes of Paiko PGI, Kilkis, Goumenissa, Greece, is a light yet expressive dry white wine crafted from Xinomavro, Roditis, Sauvignon Blanc, and Assyrtiko grapes. The vinification involves gentle pressing and separate low-temperature fermentation for each variety, followed by blending and three months on lees, with no oak ageing. This organic, vegan, and vegetarian wine offers vibrant citrus, intriguing peat, and a hint of quince, balanced by lovely acidity and a mineral finish. It pairs beautifully with salads, grilled fish, meze platters, and mild cheeses like Brie or Camembert.

Vinification
Roditis, Sauvignon Blanc and Assyrtiko are gently pressed and let to ferment in separate vats at low temperatures. Xinomavro is pressed and immediately separated from the skins, and then left to ferment at low temperatures. Following the alcoholic fermentation, the wines are blended together, with the final wine remaining in contact with the lees for 3 months before being bottled. No oak ageing.
