Domaine Patrick Vauvy Sauvignon de Touraine Touraine AOC, Loire, France, is a rich, dry White still wine crafted from Sauvignon Blanc grapes. Patrick Vauvy, often the last to harvest, ensures fully ripe fruit, resulting in an attractively aromatic profile with abundant exotic fruits and a hint of mint. The palate is fresh and tangy, leading to a fruity and moreish finish. This vegan and vegetarian-friendly wine is an ideal accompaniment to asparagus with hollandaise, goats cheese, or tuna dishes. The vinification involves gentle pressing, skin contact for 15% of the wine, natural fermentation with indigenous yeasts, and temperature control to preserve aromatics, followed by cold stabilisation.

Vinification
The ripe grapes are gently pressed and the free run juice is allowed to settle for a period of around days. Around 15% of the wine spends 5 hours in contact with the skins. The fermentation starts naturally with indigenous yeasts and is temperature controlled to preserve the aromatics. The wine is then cold stabilised in the winter before bottling.
