This dry wine undergoes whole cluster maceration and fermentation with indigenous yeasts in wooden vats, followed by extensive ageing in foudre for 36 to 48 months, with a subtle smoky character from barrel fermentation. It delivers immense character and intensity, with a vibrant core of blackberry, plum, liquorice, and earthy notes. Vegan and vegetarian-friendly, it pairs exceptionally well with roast meats like venison or lamb, and mature hard cheeses.

Vinification
Whole clusters are macerated for 8 to 10 days. With fermentation using indigenous yeasts in wooden vats. The wine is aged in foudre on its fine lees for 36 to 48 months, prior to bottling without fining or filtration.
