Guerila Pinela from Vipava Valley, Slovenia, is a captivating dry white still wine crafted from the indigenous Pinela grape. This organic, vegan, and vegetarian-friendly wine undergoes hand harvesting of biodynamically produced grapes, followed by spontaneous fermentation and nine months of maturation on lees in stainless steel tanks. It presents a complex nose with aromas of peach, pineapple, citrus, and dried flowers. On the palate, it offers a full-bodied experience with distinct minerality, balancing freshness and smoothness. This versatile wine pairs beautifully with seafood, pasta, risotto, white meats, and various cheeses.

Vinification
Hand harvest of biodynamically produced grapes. Four-hour maceration of crushed grapes, pressing and must decantation. Spontaneous fermentation with natural yeast already present on the grapes. Nine-month maturation of the wine on the lees in stainless steel tanks. Bottling according to Maria Thun moon calendar with minimal addition of sulphur.
