Guerila Zelen from Primorska, Slovenia, is a brilliant white still wine, organically certified and dry in style, crafted from the unique Zelen grape. Hand-harvested biodynamically, it undergoes a six-hour maceration and spontaneous fermentation, then matures on lees for four months before being bottled unfiltered with minimal sulphur. This delicate, mineral wine offers an aroma of Mediterranean herbs like thyme, combined with subtle floral and fruity notes. Its freshness and smoothness make it a versatile partner for lean fish, shellfish, pasta, and vegetarian dishes. A truly unique expression of its Vipavska Dolina terroir.

Vinification
Hand harvested biodynamically produced grapes. A six-hour maceration of crushed grapes, spontaneous fermentation with natural yeast. Spontaneous malolactic fermentation. Four month maturation of the wine on the lees in stainless steel tanks. Bottling according to Maria Thun moon calendar with minimal addition of sulphur.
