Iona Mr P Knows Pinot Noir Elgin, South Africa is an elegant, dry Red still wine crafted from 100% Pinot Noir grapes. The vinification involves hand harvesting, 10% whole bunch fermentation in stainless steel, followed by 11 months maturation in 2nd, 3rd and 4th fill French barrels. It offers an elegant nose of fresh cherry and red berry with an undergrowth melange. The palate is pure with a lovely texture, showcasing sweet cherry fruit and spicy undertones, culminating in a fresh and intensely vibrant finish. This vegan and vegetarian-friendly wine pairs beautifully with salmon, duck, or roasted mushrooms.

Vinification
Grapes are hand harvested, de-stemmed and not crushed. 10% whole bunch fermented for complexity. The must is fermented in stainless steel tanks at 28'C with regular punch downs during fermentation. Once pressed off, the wine were racked to 2nd, 3rd and 4th fill French barrels; Matured for 11 months.
