Mabis, Casato di Melzi Negroamaro Salento IGT from Salento, Italy, is a vibrant Red (ruby) still dry wine crafted entirely from Negroamaro grapes. The vinification process involves de-stemming, crushing, and temperature-controlled fermentation in stainless steel, followed by malolactic fermentation and ageing in stainless steel and bottle, with no oak influence. On the nose, it reveals inviting touches of black pepper, ripe cherries, and dark fruits, leading to an intensely fruity and full-bodied palate. This versatile wine pairs beautifully with pasta dishes, red meats, game, and mature cheeses. It is also suitable for both vegan and vegetarian diets.

Vinification
Grapes are harvested and taken to the winery for de-stemming and crushing. Stainless steel, temperature controlled fermentation before malolactic fermentation and ageing in stainless steel and bottle.
