Philippe Alliet Chinon Rouge Chinon AOC, Loire, France, is a vibrant Red (still) wine crafted from 100% Cabernet Franc. This dry wine undergoes a long maceration and is aged for up to 18 months in a combination of barrels and tanks with minimal new oak, balancing early approachability with ageing potential. It reveals ripe dark berries, liquorice, cedar, and subtle pepper on the nose, leading to a medium-bodied, structured palate with elegant tannins, refreshing acidity, and a savoury finish. Certified organic, it pairs beautifully with grilled meats, charcuterie, roast lamb, game, or medium-aged cheeses.

Vinification

A long maceration with gentle punch-downs slowly extracts flavour and tannins. The resulting wines are then aged for up to 18 months in a combination of barrels and tanks, with minimal new oak influence (now using only 20% new 500L barrels, down from 100% new 225L barrels). This approach balances early approachability with long-term ageing potential. The wines benefit from the naturally temperature-controlled environment of the ancient cellars carved into the Tuffeau hillsides. Aged for up to 18 months in a combination of barrels and tanks, with minimal new oak influence.

Flavour profile

This Chinon Rouge presents a vibrant ruby-red colour, offering an aromatic bouquet of ripe dark berries, liquorice, and a hint of cedar and pepper. The palate is medium-bodied and well-structured, showcasing elegant tannins, refreshing acidity, and a savoury finish.

Serve at 14-16°C. Decant for 30 minutes to an hour.
