Raats Family Wines Dolomite Cabernet Franc from Stellenbosch, South Africa is a captivating Red still dry wine crafted from 100% Cabernet Franc grapes. The vinification process involves a five-day cold soak, fermentation at 28°C, basket pressing, and malolactic fermentation in stainless steel, followed by 14 months of ageing in older French oak. This elegant wine offers a captivating aroma of dark and red cherry, complemented by notes of dark berries, herbs, and a hint of green pepper. On the palate, it delivers pure fruit flavours, a subtle wet-stone minerality, and a wonderfully velvet soft finish. It is vegan and vegetarian friendly. A versatile choice, it pairs beautifully with game bird, beef fillet, or pork loin.

Vinification
Grapes were hand sorted three times, crushed and left to cold soak on the skins for five days. After fermentation at a temperature of 28°C, the grapes were basket pressed before malolactic fermentation in stainless steel tanks.

Serving recommendation
Serve at 16-18°C. Decanting for 30 minutes before serving will enhance its complex aromas.
