Stella Bella Otro Vino, Chardonnay from Margaret River, Australia is an elegant, textural and dry still white wine (Chablis style) crafted from 100% Chardonnay grapes. Hand-picked and whole bunch pressed, it undergoes 100% wild fermentation in 5+ year old French oak barriques, followed by 9 months of oak ageing. It presents aromas of green mango, with hints of floral and mineral notes, alongside a focused fruit palate, a chalky texture and vibrant natural acidity that stimulates the palate. This vegetarian-friendly wine, though uncertified organic, pairs beautifully with rich fish like tuna and salmon sashimi.

Vinification
Hand-picked at approx. 12.0 - 13° Baume and 8 - 9g/L TA. Whole bunch pressed to extract the free run juice. 100% wild fermented in 5+ year old French oak barriques to ensure a pure fruit flavour.
