Tenuta Olim Bauda Gavi del Comune di Gavi Gavi del Comune di Gavi DOCG, Piedmont, Italy, is a certified organic, vegan and vegetarian dry White still wine crafted from elegant Cortese grapes. The must undergoes maceration with skins and fermentation in stainless steel, followed by refinement on lees to preserve its delicate flavour. It offers a fine bouquet of intense floral notes, leading to a fresh, soft, and harmonious palate with a delightful finish. This versatile wine pairs beautifully with mild cheeses, lean fish, and poultry.

Vinification
Grape destemming and pressing take place on the evening following harvest. The must is poured into stainless steel vats, where it undergoes maceration along with skins at a temperature of 12°C. After skin separation, alcoholic fermentation begins and goes on for about 15 days at a temperature of 15-16°C; this temperature is needed to preserve the wine's delicate flavour. Later on, a refinement on the lees will take place in stainless steel vats until May.
