Thistledown The Great Escape Chardonnay from McLaren Vale, Australia, is a dry white still wine crafted from 100% Chardonnay grapes. This accomplished, truly modern style is produced from fruit grown in elevated vineyard sites, allowing for a long ripening period. The wine is wild fermented in used French oak or concrete egg, with no malolactic fermentation to preserve its crisp, citrus fruit profile. It offers a vibrant citrussy character with subtle oak influence and a bright, creamy palate, leading to a mouth-watering finish. This vegan and vegetarian-friendly wine pairs beautifully with shellfish and aromatic Asian dishes.

Vinification
Fruit went directly to press after picking. The free run juice was run off to tank to settle. We retain a relatively high level of solids in the ferment, all of which is wild fermented in used French oak or concrete egg. We do not encourage malolactic as they want to preserve the crisp, citrus fruit profile.
