Indomita Costa Vera Carménère from Central Valley, Chile, is an expressive and intense dry red wine. Crafted from Carménère grapes, with some lots undergoing cold maceration before fermentation in stainless steel, it offers wild berry, truffle, violet, spice, and grass aromas. The palate is rich and harmonious with gentle tannins and a refreshing finish. This vegan and vegetarian-friendly wine pairs beautifully with lamb vindaloo, meaty empanadas, or Mexican beef chilli.

Vinification
Some lots of grapes are cold macerated for 2 days before crushing. The grapes are de-stemmed and gently crushed then fermented in stainless steel at a temperature of between 25° and 28° C.
