Indomita Polero Gran Reserva Carignan from Maule Valley, Chile, is a vibrant Red still dry wine crafted from 100% Carignan grapes. It undergoes 12 months of ageing in old French oak, developing a delicate concentration and softness. The nose offers punchy fruity aromas of fresh and sour cherries with a hint of candied fruit. On the palate, it presents a perfect balance of fruit, alcohol, and acidity, leading to a fresh, soft yet persistent finish. This vegan and vegetarian-friendly wine is an excellent accompaniment to roast duck, rabbit stew, or empanadas.

Vinification
The grapes are destemmed, ground and then transferred to stainless steel tanks where they ferment under controlled temperature conditions. After a very brief alcoholic fermentation, the wine is racked for malolactic fermentation. 12 months of aging in old oak for the wine to develop and integrate.

Serve at 14-16°C, decant for 30 minutes to enhance aromas.
