Azienda Agricola MonteZovo Valpolicella Superiore, Valpolicella Superiore DOC, Verona, Italy, is a vibrant red, still, dry wine crafted from Corvina, Corvinone, and Rondinella grapes. Fermented in inert stainless steel with no oak ageing, it presents an intense red hue with garnet highlights. The nose is filled with ripe fruits, cherries, plums, and blackcurrant, complemented by floral notes of geranium and violet, alongside hints of vanilla and cinnamon. On the palate, it is smooth, balanced, and full-bodied, offering a rich and complex flavour experience. This vegan and vegetarian-friendly wine pairs wonderfully with a variety of Mediterranean dishes.

Vinification
After destemming and pressing, the fermentation takes place in inert stainless steel for around 15 days. The temperature raises to 20-24 degrees C. After fermentation the wine is run off the skins, gently pressed and left to rest in inert vessels for a few months before bottling.
