Baglio Gibellina Sogno del Sud Organic Grillo from Sicily, Italy, under the Sicilia IGT designation, is a delightful dry White (bianco) still wine crafted from 100% Grillo grapes. Hand-harvested in late August/early September, the grapes are vinified in stainless steel tanks at 15°C, with maturation and battonage for the first month, ensuring no oak ageing. This vegan and vegetarian certified organic wine presents an intense nose of exotic fruit and spice, leading to a fresh, soft, and well-balanced palate with a persistent aftertaste. It pairs beautifully with rich fish dishes like smoked salmon and tuna, or spicy white meats.

Vinification
The grapes are harvested by hand in the end of August and 1st week of September, and are vinified in small stainless steel tanks at a controlled temperature of 15°C. The maturation occurs in small stainless steel tanks with battonage for the first month of refining.
