Bodegas Altolandon Dulce Enero Ice Wine Manchuela DO, Spain, is a certified organic, natural, vegan, and vegetarian White (still) wine crafted from Petit Manseng grapes. Made from hand-harvested, naturally frozen grapes, this sweet wine undergoes a slow fermentation with native yeasts in stainless steel tanks. It offers an intense nose of sweet tropical fruits, peach, apricot, and citrus, with a hint of spice. The palate is rich with stone fruits, a medium body, and a long, sweet finish, balanced by crisp acidity, mineral notes, and persistent honeyed hints. Excellent as an aperitif, it also pairs beautifully with foie gras, mature cheeses, or shellfish.

Vinification
As the water is first to freeze within the grape, an increased concentration of sugars is obtained from the must. The grapes must be pressed before the ice crystals break down. The yeasts for fermentation are native, preceding much of the character and personality of the terroir. Fermentation is a very slow process, it can take 2 to 3 months and is carried out in small stainless steel tanks to provide a completely natural wine, with no added sulphites and the stabilisation and clarification are also a natural sedimentation process.

This golden, almost amber coloured wine offers an intense nose of sweet tropical fruits, peach, apricot, citrus, and a hint of spice. The palate is rich with stone fruits and a long, sweet finish, balanced by crisp acidity and mineral undertones, with persistent notes of honey.
Serving recommendation
Serve very cold, ideally at 6-8°C, as an aperitif or with rich desserts.
