Bodegas Altolandon Rosalia Garnacha from Manchuela DO, Spain, is a vibrant red (ruby) still dry wine crafted from 100-year-old Garnacha vines. This organic, vegan, and vegetarian-friendly wine undergoes fermentation in open-top barrels and amphora, with malolactic fermentation in French oak barrels and amphora, followed by 8 months of elevage in amphora. It offers a clean nose of mature red fruit, candy fruit, and floral notes with a balsamic finish. The palate is agile with grippy, ripe tannins and pleasing fresh acidity. A versatile choice, it pairs beautifully with cured meats, veal, poultry, or mild cheeses.

Vinification
Alcoholic fermentation is managed in 500l open top barrels and amphora, with manual punching down to extract colour and aromas. Alcoholic fermentation is spontaneous to maximise the natural potential of the grapes. When alcoholic fermentation is complete, the must is pressed directly to French oak barrels (50%) and amphora (50%) where the malolactic ferment takes place, also in a natural and spontaneous way. The elevage takes around 8 months in amphora. Stabilisation is also natural, as during the coldest months temperatures can go to minus 15° C.

This vibrant red wine offers a clean nose of mature red fruit, candy fruit, and delicate floral notes, culminating in a delicious balsamic finish. The palate is agile, showcasing grippy, ripe tannins balanced by pleasing fresh acidity, creating a harmonious and engaging experience.
Serving recommendation
Serve at 14-16°C. Decant for 30 minutes to enhance its vibrant fruit and floral character.
