Bodegas Ximénez Spínola Exceptional Harvest from Jerez, Spain, is a still, sweet white wine crafted exclusively from Pedro Ximénez grapes. This unique wine undergoes a late harvest, with grapes ripened on the vine for an additional 21 days, achieving natural sweetness without extreme concentration. It is then aged on lees for four months in old American oak barrels. It presents a golden hue with an intense nose of figs, raisins, and prunes, interwoven with delicate pastry notes. The palate is light yet intense, showcasing a beautiful interplay of acidity and natural sweetness with ripe, fleshy fruit, culminating in a long, elegantly oaked finish. Vinification
Ripened on the vine for 21 additional days after the first trie, acquiring a natural sweetness without too extreme a concentration. This makes the final yield of this wine to be only 575 liters per ton of grapes. Aged on the lees for 4 months in old American oak barrels.
