Castello di Meleto Chianti Classico Riserva Chianti Classico Riserva DOCG, Tuscany, Italy, is an intense ruby red still dry wine crafted from Sangiovese and Merlot grapes. It offers a nose of ripe fruit, aromatic herbs, sweet spices, and black pepper. The palate is round-bodied with soft tannins, leading to a complex and persistent finish. Vinified with spontaneous fermentation in wooden casks and aged for 20 months in Slavonian oak barrels and concrete vats, this wine is perfect with pasta dishes featuring meat or game ragu, or mature cheeses. This wine is suitable for both vegans and vegetarians.

Vinification
Grapes are harvested by hand after vigorous selection in the vineyard. Stems are removed and grapes are soft pressed. The must obtained undergoes spontaneous alcoholic fermentation in 53 Hl wooden casks. Once the fermentation is complete, the wine remains in contact with the skins for 20-25 days before it is introduced into cement vats for malolactic fermentation. The wine ages 20 months in 54 hl Slavonian oak barrels and concrete vats.
