CDLD - R.Guiberteau, Chai de la Dive Saumur Les Moulins Blanc Saumur AOC, France, is a vibrant, dry white still wine crafted from organically farmed Chenin Blanc grapes. This vegan and vegetarian friendly wine undergoes spontaneous fermentation in stainless steel or old foudres, with 6-9 months of lees ageing, a quarter in old oak, to preserve varietal expression and minerality. Aromas of green apple, quince, and white peach lead to a vibrant, linear palate with electric acidity, stone fruit, citrus peel, and subtle almond tones. A touch of lees texture adds volume, culminating in a zesty, saline finish. It pairs beautifully with fresh shellfish or spicy Thai and Vietnamese dishes.

Vinification
Grapes are hand-harvested and gently pressed as whole clusters to retain freshness. Fermentation is spontaneous, using only native yeasts, and occurs in stainless steel or old, large-format foudres. Lees ageing for 6-9 months adds mid-palate texture and complexity, in stainless steel with 1/4 of the blend in old oak foudre to preserve varietal expression and minerality. There is no malolactic fermentation, maintaining Chenin's natural edge and vibrancy. The wine is bottled unfiltered or lightly filtered with minimal sulphur.

This bright, tensile Chenin Blanc radiates with clarity and lift, offering aromas of green apple, quince, white peach, and chamomile. The palate is vibrant and linear, showcasing electric acidity wrapped around stone fruit, citrus peel, and subtle almond tones, all underpinned by a fine chalky minerality and a zesty, saline finish.
