Celler de Capçanes Pansal del Calàs Montsant DO, Spain, is a concentrated still Red wine, lusciously sweet and crafted from old-vine Grenache and Carignan. Fermentation is halted with grape alcohol, followed by 30 days of maceration and 15 months of French oak ageing. This vegan and vegetarian-friendly wine offers enormous concentration, revealing seductive roasted aromas of plums, cassis, and dark cherries, alongside notes of toast, coffee, and mocha. It boasts perfectly aligned alcohol, lively acidity, and an elegant, smooth finesse with soft, ripe tannins. Its attractive, well-integrated sweetness makes it a versatile pairing for main courses like roast beef, game, roasted duck, or mature cheeses, as well as bitter chocolate.

Vinification
Fermentation is halted with the addition of grape alcohol retaining a natural sweetness of 70 g/l. Fermentation is controlled at 27-29°C with indigenous yeasts used. Maceration for 30 days, both varieties are vinified together in stainless steel tanks. Not cold stabilised but undergoes a light filtration.

This dark, concentrated Red wine offers an enormous concentration of very ripe, seductive fruits, featuring roasted aromas of plums, cassis, and dark cherries, complemented by notes of toast, coffee, and mocha. It presents a perfectly aligned alcohol and lively acidity with an elegant, smooth finesse, alongside a serious soft and ripe tannin structure.
