Domaine Capmartin Agrumes & Caetera Pacherenc du Vic Bilh AOP, France. This still, dry White wine is crafted from Gros Manseng, Petit Manseng, and Petit Courbu grapes. It undergoes pellicular maceration and is aged for 6 months on the lees in stainless steel tanks, enhancing its aromatic complexity. Expect a beautifully perfumed bouquet of citrus fruits, pineapple, and crisp apples, leading to a well-balanced palate with vibrant fruit and a subtle spicy minerality. Vinification
After destemming, pellicular maceration is carried out, a phase right before fermentation begins that involves macerating the grape berries at a low temperature away from the air, in order to activate the first aromas. A standard fermentation process follows, with oxygen provided for the yeasts, which transform the sugar from the grapes into alcohol. Aged for 6 months on the lees in stainless steel tank.
