Domaine Fichet Bourgogne, Pinot Noir Bourgogne AOC, Burgundy, France, is a dry still red wine crafted from 100% Pinot Noir grapes. The vinification involves 100% destemming, cold maceration, and fermentation at 27°C, followed by 10 months of French oak ageing (10% oaked, no new oak). This medium-bodied wine is infused with vibrant red cherries and strawberries, complemented by a slight savoury aspect, offering a beautifully fresh and light profile. It pairs exceptionally well with game terrine or various pasta dishes.

Vinification
The grapes are 100% destemmed on arrival at the winery, there is then a period of cold maceration for 2-4 days at 12°C. The alcoholic fermentation is at 27°C with daily delestage for the first few days then pump over towards the end.
