Fabrizio Vella Catarratto Sicily IGP, Italy, is a natural Orange still wine, dry and made from the indigenous Catarratto grape. Vinified with gentle pressing, 24-hour acacia wood fermentation and maceration, followed by stainless steel fermentation and malolactic conversion, it offers a punchy nose of crisp apple. The palate is rich and textured, revealing crunchy green apple, zesty lime, and a delightful lemon drizzle cake finish. This vegan and vegetarian-friendly wine is a versatile partner, pairing wonderfully with traditional Sicilian pasta dishes.

Vinification
Using the best fruit in the vineyards, and less sulphur in the winemaking (and thus extra attention in the winery), the grapes are first very gently pressed and fermented in 50 hl acacia wood barrels for 24 hours. After maceration a second soft pressing of the grape and must.
