Fabrizio Vella Rosso Biologico Sicily IGT, Italy, is a still, dry Red wine crafted from Nero d'Avola grapes. It undergoes fermentation in wooden barrels with natural yeasts, followed by a month of skin contact and 8 months of ageing in neutral oak. This natural, vegan, and vegetarian certified organic wine reveals a complex nose of spicy liquorice, rich chocolate, and abundant dark fruits, leading to a crisp, pleasant, and persistent palate. It pairs wonderfully with steak, game, and mature hard cheeses.

Vinification
Fermented in wooden barrels, 70% crushed and 30% the whole bunches. A temperature controlled fermentation to reach 28°C. A natural fermentation without the addition of yeast, which takes around 10 days, then the malolactic ferment starts with skin contact for 1 month. Aged in neutral oak for 8 months.
