Iona Sophie Te'Blanche Sauvignon Blanc, Elgin, South Africa, is a vibrant and fresh dry white still wine crafted from Sauvignon Blanc grapes. Hand-harvested and immediately pressed, the juice is fermented with selected yeasts and spends four months on fine lees, with no oak ageing. It offers a delightful profile of cut green apples, zesty limes, gooseberries, tropical notes, and white flowers, complemented by subtle mineral undertones, resulting in a crisp, balanced, and delicious experience. This vegan and vegetarian-friendly wine is versatile with asparagus, rich fish, and spicy Thai cuisine.

Vinification
Grapes were hand harvested at optimal ripeness during the season. Grapes are crushed and pressed immediately. Juice was settled overnight before being inoculated with a variety of selected yeast. After fermentation, wines are racked and spend 4 months on the fine lees before blending and bottling.
