Largesse Sauvignon Blanc-Colombard from Côtes de Gascogne IGP, France, is a crisp and refreshing dry white wine. Crafted from Sauvignon Blanc and Colombard grapes using a modern winemaking process involving cold skin contact and low-temperature fermentation, it is matured on fine lees to enhance its intense fruit aromas. This vegan and vegetarian-friendly wine offers delightful citrus and floral aromas, leading to vibrant green apple and grapefruit flavours with a smooth, zesty mouthfeel. It is a versatile choice, perfect as an aperitif or paired wonderfully with seafood.

Vinification
After harvest the grapes undergo a modern winemaking process. After a 24 hours skin contact, at 6°C, only the premium juices are fermented at low temperature. The intense fruit aromas come from the specific method used to extract all of the fruit flavours from the lees. During the next 40 days the juice is kept at a 0°C temperature then the extracted clear juice contains all of the fruit specs of the grapes. The resulting wine is matured on its fine lees at -2°C until bottling.
