Le Clos du Caillou Bouquet des Garrigues Côtes du Rhône AOC Southern Rhône, France, is a vibrant Red still dry wine crafted from Grenache Noir, Syrah, Cinsault, Carignan, and Mourvèdre. After destemming, grapes undergo cold maceration and natural fermentation, then age for 14 months in foudres and wooden barrels. It offers intense aromas of ripe red and black fruits, fragrant garrigue herbs, and subtle floral notes. The palate is fresh and lively with juicy fruit flavours, balanced by smooth tannins, a hint of peppery spice, and a savoury, mineral finish. This approachable wine pairs excellently with Mediterranean dishes like grilled sausages, ratatouille, or roast chicken with herbs.

Vinification
After destemming, the grapes undergo a 48-hour cold maceration in a cement tank before natural alcoholic fermentation begins with wild yeasts. During maceration (24-30 days), daily pumping over and aerated délestage are performed. The wine is aged for 14 months in both foudres and wooden barrels. 100% of the wine is oaked in foudres and wooden barrels for 14 months, with no new oak used.
