Majella Sparkling Shiraz from Coonawarra, Australia, is a superb Red sparkling wine, crafted from 100% Shiraz grapes. This off-dry wine undergoes primary fermentation in stainless steel, followed by secondary fermentation in bottle on lees for nearly 12 months, with a unique addition of vintage port liqueur. It is then aged for 6 months in second-use French oak hogsheads. The result is a full-flavoured wine with a subtle balance of fruit, vanilla wood, and hints of cinnamon and pepper, complemented by yeasty bread characteristics and a soft acid finish. A versatile choice, it pairs exceptionally well with game, spicy foods, and cured meats. This wine is both vegan and vegetarian friendly.

Vinification
Primary fermentation was in 10 tonne stainless steel static fermenter's pumped over twice daily and finished in hogsheads. Secondary fermentation carried out in bottle on the lees for almost 12 months. The wine is then disgorged and a small amount of "liqueur" (sweetener) is added. In the true Aussie tradition they use some really fantastic vintage port.
Flavour profile
This sparkling red offers a full-bodied experience, balancing rich fruit notes with a subtle influence of vanilla and baking spices from oak. Hints of cinnamon and black pepper mingle with yeasty bread characteristics, leading to a palate with soft acidity.
