Montsablé Chardonnay Haute Vallée de L'Aude IGP, France, is a delightful still white wine, dry and crafted from 100% Chardonnay grapes. This elegant wine undergoes cold skin contact and lees ageing to enhance its complexity, with 20% aged in French oak for three months, adding a subtle, integrated touch. It presents bright pale golden hues, offering scents of wild flowers, ripe apricot, and peach, complemented by a fresh citrus finish. The palate is crisp and refreshing, showcasing ripe fruit and a rounded texture. This versatile wine is vegan and vegetarian-friendly, making an excellent match for a wide range of fish or white meats.

Vinification
The slower ripening grapes benefit from a period of cold skin contact and maceration. Pressing of the grapes with separation of free-run juice from pressed must. Cold static must settling. Temperature controlled fermentation at 17-18°C. The wine is left on its lees to add complexity of flavour, texture and weight whilst retaining a crisp, refreshing, ripe fruit finish. 20% of the wine is aged in French wood for 3 months.
Flavour profile
This Chardonnay offers a bright pale golden hue, revealing delicate scents of wild flowers alongside notes of ripe white fruits like apricot and peach, culminating in a fresh citrus finish. A subtle touch of well-integrated oak adds a rounded complexity to the palate.
