Whole bunch pressed, it undergoes fermentation in stainless steel barrels and tanks with wild yeast, aged on fine lees for three months with no oak ageing. It offers a captivating nose of apple blossom, orange zest, and a hint of ginger, leading to a bracingly fresh palate of crisp apple and lime, showcasing surprising weight and texture. This vegan and vegetarian-friendly wine is a perfect pairing for spicy food.

Vinification
Whole bunch pressed, fermentation in a mixture stainless steel barrels and tanks, using wild yeast and minimal temperature control, aged on the fine less for 3 months.
