Raats Family Wines Old Vine Chenin Blanc Polkadraai Hills, South Africa, is an elegant dry white still wine crafted from Chenin Blanc grapes. Half of the wine is fermented and matured in French oak barrels, while the other half is fermented in stainless steel, then blended and left on lees for two months. This creates a restrained yet complex profile, revealing aromas of quince, ripe pear, and orange blossom, leading to a palate of pineapple, lemongrass, and a spicy, limey finish with vibrant acidity. It is vegan and vegetarian friendly, pairing beautifully with rich creamy mussels, smoked salmon, or white fish with a beurre blanc sauce.

Vinification
50% of the wine was fermented and matured in 300 litre French oak barrels to accentuate the soft, luscious flavours; 50% fermented in stainless steel to contribute a crisp acidity and bright citrus flavours. After 11 months, the two components are blended together and left on the lees for a further 2 months before bottling. Fermentation temperature: 18-22°C.
