Tenuta Olim Bauda La Villa Barbera d'Asti DOCG, Piedmont, Italy, is a vibrant Red still wine, dry and crafted from 100% Barbera grapes. The grapes are hand-selected and undergo a 12-day maceration and alcoholic fermentation in stainless steel, with careful temperature control, followed by three months of bottle refinement. This certified organic, vegan, and vegetarian wine boasts a deep ruby-red colour with concentrated cherry and berry fruit aromas, leading to a generous, full-bodied palate and a long, enticing finish. It pairs beautifully with cured meats, pasta dishes, and goat cheese.

Vinification
The harvest in the Bauda vineyard takes place in the first week of October and grape selection is by hand. Immediately after having been harvested, the grapes are pressed in the Estate cellar and then poured into stainless steel vats. Maceration along with alcoholic fermentation lasts 12 days. Throughout all the steps, fermentation temperature is constantly kept under control and never exceeds 30°C. The wine is bottled in July, and bottle refinement goes on for three months.

Serve at 14-16°C; decant for 30 minutes to allow its vibrant fruit aromas to open.
